My dear Beard,
I met Darija at a hostel in Edinburg, Scotland when backpacking around the UK. She’s a young and beautiful Croatian girl who lives in Sydney. I liked her very much and we decided to explore the city together. The first thing we did was trying to find avocado in town because Darija said: “I love avocado, and I haven’t had it for such a long time!”. And that “long time” was, well, four days.
Science says avocado is virtually the only fruit that has monounsaturated fat, plus it’s cholesterol free. I do like its creamy, fatty and hearty taste. I usually make Vietnamese avocado shake (sinh tố bơ) or just eat it alone with a little sugar. And it’s yummy every time.
One morning I woke up very late and was too lazy to make myself a full breakfast or go out to eat. Fortunately, there was an avocado and some coconut meat left in the fridge. Yay!
Here’s the recipe:
- 1 avocado, peeled and cubed
- 3 tsp condensed milk
- 2 tsp dried or fresh coconut meat (copra)
- 1 tsp sliced almonds
In a bowl, combine avocado, condensed milk, coconut meat and sliced almonds.
How quick and easy and yummy is that, Beard? Buy me an avocado
